I am seeking a solution for the aforesaid problem. I have seen various designs for constructing oil & grease trap but my problem is how do i replicate the same practically. I have found a video while reserching for the topic:

I really liked the concept but I suppose there should be some mathametical specifications for desigining the same. How should i go about it.
Specification:
* The oil & grease trap would be for a kitchen (25 people).
